Juice lemons, strain and set aside the lemon juice. Peel peaches, take out the pits, and slice them. Add peaches into a sauce pot and combine with sugar, vanilla extract, and 2 cups of water. Stir and bring the mixture to simmer over medium heat. Lower the heat a little and let peaches cook until softened.
Instructions. Peel 5 lemons. Place peels in a bowl and mix with 1 cup of sugar. Soak for an hour. Once an hour has passed, boil a gallon of water and pour the boiling water on the sugar/peel mix. In a 2 quart pitcher, combine the lemon juice, water and sugar. Stir until sugar is dissolved. Chill in refrigerator. Heat 4 cups sugar with 6 cups of water in a medium saucepan until it's dissolved. Set this in the fridge to cool. Chill the lemon juice if you have the time. Pour the lemon juice into a large vat. Pour in 3/4 of the syrup, then top off the vat with ice.
